Potato Salad (Korean Restaurant Banchan Style)
Ingredients:
1 lb. potatoes
1 apple (my own addition)
3 large slices of sandwich ham (should be about 2 mm thick)
1/2 cucumber
1/2 small white or yellow onion
1/2 cup mayonnaise
1 tsp mustard
salt/pepper (for taste)
Directions:
Boil the unpeeled potatoes. Meanwhile, cut the cucumber lengthwise and remove the seeds. Cut the cucumber into thin slices and place them in a small bowl. Add one teaspoon salt and mix well. Cut the onion into thin slices and soak them in cold water until you’re ready to use them. When the potatoes are done, remove the skins and cut the potatoes lengthwise, then cut them into pieces about 1 inch wide. Wash the cucumber with water and squeeze the water out. Also squeeze the water from the onion. Place the potatoes, cucumber and onion slices, ham, and the rest of the ingredients in a large bowl and mix well.

i dont like the apples
the apple disguised in mayo pretending to be a potato.. not a good taste. one time i got all apples and no potatos.
i hear that the restaurants put in a bit of powdered creamer into the salads… i forget why.
no apples for me either.. all potatoes are much better.. also, it’s helpful to cut the potatoes into quarters before boiling.. helps boil evenly and more quickly.. i add corn, peas, carrots to mine too.. haha

i LOOOOVE the apples! this is my favorite banchan (except the meh oon gae jang)… and except for ojingoh with chojang… and the vinegar moo…. hrm ok i like a lot of banchan…
i don’t understand how this became popular in korean restaurants. it’s not even a korean dish.
there can very easily be too many apples, but it is well.
i do the chopped apples, potatoes, cucumbers & raisins version with mayo/salt/sugar every thanksgiving.

there is a current kimchi crisis in corea. supposedly the cabbage from china is very unhealthy. i think consumption is going down
not my favorite banchan… but I always end up nibbling on it.
i love the egg dish. and the best korean restaurant to me in ktown is the one right next to Blue, but tis always horribly busy. eh.

I’d love to know the history behind this dish. This is something my mother never made for us, so when I moved down south to Atlanta and went to the local Korean restaurant here, I thought it was extremely odd for this dish to appear! I had no idea that this was a popular dish in Korea.
For me, “potato salad” still doesn’t sit well for me amongst other Korean dishes, just seems very odd to me.
