Kimchi Bokeumbap
ingredients: 4~5 servings
prep time: 5-10 minutes
overall time: 15~25 minutes max.
Ingredients:
2 1/2 cups old but not too old kimchee
1/4 cup (+/-) of kimchee juice
2 cups of spam ((about 1/2 can) diced into small pieces
1/2 tablespoon of soy sauce
1 tablespoon of olive oil
1 tablespoon of “secret ingredient” – peanut butter
2 tablespoons of sesame oil
2 1/2 ~ 3 tablespoons of corn syrup
1 “thing” of scallion (finely chopped)
3 (+/-) small bowls of rice
3~5 squares of seasoned seaweed
1~2 eggs
*optional toasted (non-salted) sesame seeds
Directions:
- first put spam in heated pan. (medium~ meduim/high flame)
- add in olive oil.
- when spam goes from light pink to a dark pink, add kimchee.
- add in secret ingredient (creamy not chunky peanut butter) mix in well with spam & kimchee.
- add in rice. if you feel there isn’t enough “sauce” to coat the rice, add in kimchee juice.
- add soy sauce, sesame oil and corn syrup.
- put heat on low, add in scallions.
- (make sure your hands are clean) take your seaweed, crush them in your hand and sprinkle into your rice mixture.
- fry eggs sunny side, over-easy or well done (your choice) and place it on top of your yummy kimchi fried rice.
- first put spam in heated pan. (medium~ meduim/high flame)

i swear it’s good~ you won’t taste the 1 tablespoon of peanut butter. i usually have it in my ddukboki~ thought i would try it for kimchee bokeum bap. turned out great!
my gf n i agree that we can live off spam, kimchee, n egg for the rest of our lives
omg, peanut butter? eric doesn’t like spam. i was crushed when i found out. how will it ever work out btwn us? i put spam in everything!

that’s some fancy kimchi fried rice. i thought the whole point of making it was cuz it’s like the simplest thing ever to make.
i think i could eat this everyday.
i just tried the peanut butter thing. you don’t taste the peanut butter but it makes the dish creamier and dulls the heat and tanginess from the kimchi. makes it mild and rich. sort of earthy? i dunno. personally i like my kimchi bokeum bab fluffy and spicy so this peanut butter thing isn’t for me but maybe other people will like it.
oh dammit, i just finished eating kimchibokeumbap. i shoulda tried peanut butter.

If you add a spoonful or two of ggo chu jang and use butter instead of oil, you might like the richer-kicked up taste if you don’t mind the extra calories.
my mouth is watering. sounds good. instead of spam, i added turkey on the day after thanksgiving and it was delicious!
i can’t IMAGINE what peanut butter will do to the taste….. not so sure if i would try…
