Do you like “sheen” kimchi (very fermented), or fresher kimchi?
I used to only like sheen kimchi when I was younger, but I like fresher kimchi more than sheen as I get older. I still like both – can’t live without it. But Mr. Bee thinks sheen kimchi tastes weird…

i prefer fresher. not a fan of the overly fermented -> translucent stuff.

SHEEN kimchi is still my all time favorite kimchi no matter cabbage, cucumber, or radish.

i usually like fresh kimchi for every day, but definitely the sheen kimchi for making kimchi chigae!

fresh! and none of that msg stuff u buy. i love my mom’s homemade kimchi when i actually it eat. usually i prefer not to eat it at all.

i like it just right, a little time after it’s been freshly made. but sheen kimchi is great for bokkeumbap & kimchi jun.

depends what ur eating it with i think. with ramen u totally need sheen. or any kind of soup.
i like both depending on how they’re eaten. sheen is the best when making jiggae and fresh kimchee is good as banchan. i can’t stand eating sheen kimchee when it’s not used for jjiggae. it’s too shi-uh-suh.

it’s pretty good when it’s just becoming sheen, but for goodness sake, eat before it loses the crunch! soggy kimchi = ew. esp. soft ggakdooki.

i love kimchi when it’s first made. it tastes fresh and you can taste all the different ingredients.
i can’t eat anything remotely sheen guh AT ALL, i’m ultra sensitive so i only eat freshly made kimchi but not too hard.

I like sheen kimchee for everything, I can’t stand the fresher stuff. I always have an edible jar and a jar still fermeting around.

i prefer the fresh kind – but gguhtjuhrhee is my favorite… the long fresh pieces. and i definitely prefer the leafy pieces to the non-leafy.
if sheen kimchi is that really old kimchi, that sh*t is NASTY.
i love it sour, but it has to be good kimchi. love putting cold noodle in that sour juice, drop a little bit of sesame oil, and voila, excellent summer time lunch. i never really liked fresh ones, unless it’s gutjuri.

i find that most young ppl enjoy sheen kimchee whereas older ppl enjoy “freshly made” ones.

haha, medium? my dad likes really sheen, and i used to like fresh.. but there’s a middle ground in between that’s just nice and tangy, but still has that that oh-so-satisfying crunch.

my husband only eats sheen…i can only eat fresh..it’s not as potent for me..I have only been eating it for the last 4 years..

depends on the mood. sometimes i like seng kimchie and other times sheen. i think i like both equally….
i like it “just right” in the middle…i guess that’s just a few days before it becomes sheen-kimchi. but it’s all good bc one of my favorite dishes is kimchi chigae. ^_^

when i get fresh kimchi, i feel like i have been jipped. it makes me sad and sul puh for sheen kimchi.
side note: i think that the rectangular part of kimchee is better than the leafy stuff…but after we did a poll the vast majority of my korean friends like leafy kimchee better.
