Kimchi Pasta
You’re probably wondering…kimchee pasta?? Sounds weird. Long time ago when I was in college, I went to this restaurant on the outskirts of Koreatown. They had a dish called kimchee pasta and I loved it! I would crave it! But after a few years, they went out of business. After I got married, I tried to make it but it didn’t taste anything like it. I tried it again tonight and I thought it came out pretty good. Try and it and tell me what you think!
Ingredients:
Feeds (2-3)
1/2 pint heavy cream
1/4 stick of salted butter
Salt to taste
Freshly cracked black pepper
Kimchee (must be really good kimchee and pretty ripe)
Green onions to garnish
Directions:
First melt butter in pan and then add the heavy cream, whisking it. After a few minutes add the kimchee. Cook at medium heat for about 5 minutes and reduce to low heat. Once the pasta is cooked (I recommend spaghetti or linguini), mix together with the sauce. Add salt and pepper to taste.

omg kimchi pasta is soooo good. the one @ zip in la is good. they have them in a lot of places in la now.
ew. sounds as bad as kimchi pizza.
sounds like this pasta they had in a korean drama called “only you.” this ajuma made gochujang pasta and the main character would try to replicate it but could never get it right. she was finally able to convince the ajuma to teach her.
i actually had something just like this in korea at some random pasta place in apukujeong. i was VERY doubtful at first, but somehow, the cream sauce went well with the spicy salty kimchee. surprise surprise.

i love the kimchee pasta at nandarang.. i totally crave that all the time. it tastes like there’s alfredo sauce in it.
i happen to have all these ingredients on hand actually… so i will definitely try it!

i remember kimchi pasta was really good at Point in K-town at Aroma Center. so long ago though…

i’ve never had it but i could see it being really good! it also reminds me of that kimchi rice dish at “third floor cafe” on 32nd street… for some reason, i can’t remember the name of it but it’s this kimchi bokkeum bap with cheese melted on top. yum yum!

That’s like.. a kimchee cream sauce.. It sounds tasty, but I really love a homey, tomatoey (or in this case, I guess chili) sauce. Do you think you could puree kimchee with a red bell pepper to create a smooth, spicy pasta sauce? The cabbage can give it great substance!

i tried making this last night. But I didnt know how much kimchi and pasta you were suppose to put in. It came out pretty good except that I think I put too much heavy cream. The sauce was more pink then red…. but it was yummy!
Just told my friend to try it but with calamari added would be good. Mmm… never really tried kimchee yet and my friend has yet to convince me but with this recipe I will definitely give it a go. Thanks for posting this… and I hope more simple recipes to come!

I played around with this and used condensed milk not realizing how sweet it is, but I added some red pepper bean paste and it was great. Everyone loved it! Thanks for the recipe.

I think if you saute the kimchie in the butter first, then deglaze with a little bit of wine, and reduce to au sec… Then add the cream… it’ll come out better.
Come on, somebody post something new. I’m itching to try a new dish or learn some new techniques.

This is a great site!! I LOVE kimchee, and made a soup the other night for guests from slightly old kimchee with mushrooms in a beef broth.BUT ..someday start at the beginning and give some of your KIMCHEE recipe secrets,because making kimchee is really tricky! I finally got mine to bubble just right after figuring out taht you need a LOT of salt at first,but then you really really have to wash it OUT ,(whixh is probably why Korean ladies always use rock salt?) but if you DONT wash it REALLY WELL, the kimchee just wont bubble….maybe you all know this,but as a macaroni and cheese american it took me a lot of time to figure this stuff out!!
